Cooking dry beans

This recipe is what I follow to make black or pinto beans. It takes a few hours and we usually do it in the morning once a week or so using a cast iron crock pot although any type of large pot will do.

  • Black or pinto beans. Dry.
  • Half of a yellow or white onion
  • Couple cloves of garlic peeled & left whole
  • sea salt to taste – added at the end after cooking
  • fresh or dried epazote (or cilantro)
  • plenty of water
  • fresh jalapeño or Serrano Chile peppers


  • Put the beans in the pot.
  • Fill pot with water to cover the beans.
  • Remove damaged beans.
  • Rinse a few times to flush out any debris.
  • Add the onion, garlic, peppers, and epazote.
  • Add some olive oil.
  • With pot on the stove put the heat on high.
  • Add water to cover the beans.
  • Cover the pot with a tight fitting lid.
  • Bring to a boil.
  • Once boiling, turn the heat down to medium-low and simmer for about 2 hours. You’ll need to check on the beans now and then to make sure they have plenty of water, if not add more so that they don’t burn. After about 2 hours or ONLY once the beans have softened and their skin begins to curl or break away, you can add sea salt.
  • Before you add the salt be sure to remove the onion, epazote (or cilantro), garlic, and peppers (be sure to find the stem).
  • Add a about 1.5 teaspoon of salt at first
  • Stir and simmer for a few minutes and then taste the beans again and adding as much more salt as you desire — just be careful because it’s easier to add than it is to take away saltiness.
  • When salting the beans you can add more water and simmer for another 20 minutes, taste again and repeat if necessary. Don’t worry if there’s “too much” broth as you can use it for reheating the beans and for making refried beans.
  • At this point I turn off the heat.
  • Using a large funnel ladle the cooked beans into large mouth jars.
  • Store leftovers, once cooled, in the refrigerator for up to 4 days or you can freeze for several months if desired, they freeze quite well.

Reopening the office results covid19

As you are aware, we have been monitoring the spread of COVID-19 around the world.

At this time, one of our employees who works in the office is exhibiting symptoms of COVID-19. The employee was last in the office on April 30.

Out of an abundance of caution, all employees and contractors in the first shift must work from home tomorrow, Friday, May 1.  We will conduct additional deep cleaning and it will be closed during this time. The cleaning will be completed over the weekend and the site will reopen on Monday, May 4 for the next shift.

Additionally, we are asking that all of our employees and contractors self-monitor for the signs of COVID-19, including cough, fever, and shortness of breath (other possible symptoms are listed on the CDC website).  In the event that these symptoms develop, do not come into work. Contact your doctor or local hospital for further direction.

We also want to remind all employees of the importance of proper hygiene, including frequent hand washing using soap, not touching your nose, mouth and eyes, covering your mouth with your arm when you cough or sneeze, wearing masks in shared spaces, and using alcohol/sanitizing wipes to clean the surfaces around your work area.  Please review the COVID-19 Intranet Portal for additional information.

Typical Saturday morning around here. We’re cleaning up after breakfast and everyone’s relaxed and enjoying themselves chatting around the table. When we hear a big crashing sound as if something heavy fell on the ground in one of the kids bedrooms.

These pictures tell the rest of the story.

Oh hai, what’s this toy motorcycle doing on the ground? It’s supposed to be on top of the dresser!

Looking up we see the culprit… our cat has decided he needed that spot so he could look out the windows and better appreciate the nature happening outside.

I had to zoom in closer to better capture his expression… what do you think is going through his mind? I get the impression he’s very proud of himself and doesn’t realize (or care) that he’s done anything wrong.

What most people notice when eating chile peppers—and the reason most people eat them—is the “heat,” “bite,” or “pungency” associated with the fruit. Chile pepper “heat” is often defined as a sharp, piercing, stinging, biting, burning, or penetrating quality. Chile pepper connoisseurs agree with these claims.

Most chile peppers and foods with chile pepper additives are labeled as “mild,” “medium,” or “hot.” These designations describe the amount of heat one can expect when eating these foods. These classifications are broad and may be rather subjective, depending on the methods used to measure and rank heat.

Heat in chile peppers is caused by chemical compounds known as capsaicinoids. There are more than 22 known capsaicinoids. The major ones, capsaicin and dihydrocapsaicin, normally occur in the highest concentrations. The other capsaicinoids occur in smaller concentrations and are the “minor” capsaicinoids.

Genetics and Environment

The heat level in chile peppers is the result of two factors: the plant’s genetics and the interaction of the plant with the environment. The genetic control of heat allows plant breeders to produce a chile pepper plant with a certain relative heat level. For example, the cultivar ‘NuMex Joe E. Parker’ was genetically selected to produce fruit of “medium” heat. However, environmental factors such as temperature and water influence the heat level. A mild chile pepper cultivar bred for low levels of heat will become hotter when exposed to any type of stress in the field. Conversely, a relatively hot cultivar given optimal environmental conditions will become only moderately hot. A chile pepper plant that genetically produces low-heat fruit will not produce hot chile peppers even when grown in a stressed environment. To produce chile peppers of a predictable heat, both cultivar selection and optimum stress-free growing conditions are important.

Methods To Determine Chile Pepper Heat

Methods to measure heat in chile peppers range from the unrefined to the scientific. A common style of evaluating heat is to simply take a chile fruit and taste it. This method, while being quick and cost effective, may leave much to the palate of the taster. In addition, this method only gives an approximation of heat of the particular chile pepper pod that is being tasted.

Scoville Organoleptic Test

The Scoville Organoleptic Test is a refined, systematic approach that was the first laboratory test used to measure heat in chile peppers. In the test, human subjects taste a series of prepared chile samples to determine the heat level. The samples are diluted in the laboratory until heat can no longer be detected by the tasters. A single unit of dilution is called a Scoville Heat Unit. This procedure can be appropriate in many circumstances because it is more accurate than the taste test (“bite the chile”) technique. The Scoville Organoleptic Test is also less expensive than more advanced laboratory techniques, but it has limitations. Measuring heat with this technique is still subjective and depends on the taster’s palate and sensitivity to the chemicals that are responsible for heat. In addition, there are serious limits on how many samples a taster can handle within a reasonable time.

High-Performance Liquid Chromatography

The most accurate method for measuring heat in chile peppers is high-performance liquid chromatography (HPLC). In this procedure, fruit are dried and then ground. Next, the chemicals responsible for heat are extracted, and the extract is injected into the HPLC for analysis. This method is more costly than the Scoville test, but it gives an objective heat analysis. Not only does this method measure the total heat present, it also allows the amounts of the individual capsaicinoids to be determined. In addition, many samples may be analyzed within a short period. The NMSU Chile Breeding and Genetics Program has analyzed more than 5,000 samples using this method and has found it to be reliable and consistent.

As the demand for chile peppers increases, the heat level of the crop is more important, and an accurate and precise measurement of heat is necessary. Several testing laboratories perform the organoleptic and/or HPLC methods. The American Spice Trade Association (ASTA) publishes the procedure accepted by the spice industry. The story of a nutcracker edition 18

Christmas 2018 is over and we’re thinking about taking down the tree and figuring out where all the decorations go. This year we have a new addition to our family… a 9 inch tall nutcracker. Manuel brought him back from his recent trip to LA singing carols at Disneyland and visiting with friends. I took this picture of the fireplace mantel to remember the moment.

He fits in nicely next to the snowman candle Dominic made an one of his group activities. I broke off some buttons and had to get out the hot glue gun to repair it. There are a couple other nutcracker soldiers and a fox to complete the group.

I wonder what they are up to at night while we’re asleep and dreaming?

Use the dishwasher. Don’t hand wash. Save time, money, water. Get cleaner dishes.

True or False: Handwashing dishes uses less energy than a dishwasher?

Read this post to find out if washing dishes by hand saves more energy and money than using a dishwasher.

True or False: Does washing dishes by hand save both energy and water?

This is false.

It may be hard to believe that using a dishwasher is more energy-efficient than washing dishes by hand with hot water, but it’s true. A new dishwasher saves nearly 5,000 gallons of water a year and uses less than half as much energy than washing dishes by hand.

Using a dishwasher can help cut energy bills by more than $40 a year.

But the best part is all the time you will save. Get 230 hours back each year by using a dishwasher instead of washing dishes by hand. Save on elbow grease and time. That’s almost 10 days you would’ve spent hand-washing dishes

New dishwashers include innovations, like soil sensors, improved water filtrations, efficient jets, better dish rack designs, that help maximize efficient cleaning and use less energy and water.

Get better cleaning.

Did you know water needs to be 140º to 145º degrees to fully sanitize dishes? Your hands can’t handle this, but newer dishwashers have heaters inside that boost water temperatures more efficiently than water heaters to help save more energy.

Get a greener planet.

Energy-efficient dishwashers use less energy, which helps reduce air pollution with lower greenhouse gas emissions. With reduced water consumption, energy-efficient dishwashers also help protect our lakes, streams and oceans.

For best results:

Scrape food instead of pre-rinsing in sink or dishwasher; today’s dishwashing detergents are designed to handle lots of gunk.

Only run a full dishwasher.



How to make coffee with a french press

To make coffee with a french press method takes some preparation. Start by making sure you have all the needed pieces and parts. If you’re going to take the time to purchase your own coffee, bring it home, store it, then make coffee and wait for it to be ready then this takes only slightly more effort than using a regular american style coffee maker with a coffee filter. But it’s better if you’re sharing with someone special – this method works best for 4 cups of strong coffee and it will stay warm for a couple hours.


  1. heat – a gas stove is best but you might be able to get away with electric or a camp fire but those methods have not been tested.
  2. water – use filtered water with reverse osmosis process and glass containers for storage.
  3. kettle – a simplex kettle with a coil base reduces boiling time up to 25% over flat-bottomed varieties.simplex-kettle
  4. coffee – your choice here but a dark roast will have more flavor. The darker the roast the less caffeine but not by much… just drink more coffee.
  5. grinder – a burr grinder will produce the best grind without turning your beans into dustbaratza-encore-conical-burr-grinder-3
  6. press – we’ve tried the “classic” french press makers made out of glass but we were always breaking them so the stainless steel ones are recommended once you’re sure you are ready for the investment. Can’t machine wash it but coffee will stay warm longer and difficult (impossible?) to break.french-press
  7. Cinnamon – optional – adds a nice flavor, smells good, added to the hot water before the coffee – not after.cinnamon


    1. Fill the kettle with water
    2. Put the kettle on the stove
    3. Light the stove – high heat if you’re in a hurry, low heat if you have lots of time.
    4. Listen for the whistle of the kettle.
    5. Clean the french press pot if you didn’t do it already.
    6. Crumble the half a stick of cinnamon into the clean french press pot. Don’t worry about heating it up now. We’ll do that later.
    7. Measure the coffee into the grinder. If your grinder already has fresh beans in it then run it for the amount of time needed for your put. For our 1 liter pot we use 4 scoops of beans.
    8. Run the grinder on coarse setting. For our 1 liter pot we run the burr grinder for about 10 seconds to get the correct amount of ground coffee.20141118101714-coffee_grind_guide_2_
    9. Prepare the rest of your setting for the coffee time. Sugar, milk, toast, breakfast, what ever.
    10. Pretty soon the kettle will whistle indicating the water temperature has reached 100 Celsius or 212 Fahrenheit (at sea level).
    11. Turn off the stove.
    12. Use the water just off a boil to fill the coffee pot with the cinnamon up a little more than half way.
    13. Let the hot water and cinnamon steep for a few minutes. This gives the cinnamon time to work and also gives the water a chance to heat up the pot and cool the water temperature down just a bit. The brewing temperature of the water used is very important. It should be between 195 F (91 C) and 205 F (96 C). Boiling water (212 F – 100 C) should never be used, as it will burn the coffee.
    14. Now add the ground coffee beans to the hot water in the pot.  Stir gently with a wooden or glass utensil.
    15. Put the cover on the french press pot but do not push it down all the way yet. Just push it down a little bit to make sure the grounds are under water.
    16. After a few minutes we’re ready to push down the filter all the way. Do it slowly so the grounds don’t leak past the seal.
    17. Now you’re ready to enjoy your coffee!!! Pour it in the cup and relax.
